Just clarify (that I'm reading it right) . . .

If a Hunter proclaims he's doing a Stalk & Shoot Hunt for a Cat.

Cat's Perception is 3. Hunter's Perception is 1.
3-1=2, the Hunter get's 2 added to his agility even though the cat is more perceptive?

I knew that would be a problem explaining clearly. :( It's strictly the Hunters perception subtracted from the prey's.

1-3= -2 The Hunter gets a -2 to his Agility.

That would be Prey's from the Hunter's.
So it should read more like:

Subtract the Prey's Perception Score from the Hunter's Perception Score and the result is added to the Hunter's Agility score if the number is positive but deducts from it if negative.

Same here, :D
that's why I like others to read everything I write . . . make sure it makes sense :)

Might want to clarify if the comparison applies before the rest of the Methods/Tricks
are revealed or after they are revealed.

I proposed that dang Skill, now only after you have re-written it slightly
am I seeing possible issues with it. :D

Think I need more coffee.

Another "Hunting Trick" that could be used . . .
not sure what modifiers you would like to use though.

Bait and Wait
Hiding on an elevated perch you wait for your target animal to take the bait.
Often a live animal tied to a stake. This is a slow process and could lead to
the hunter being out all night waiting for a chance.
Must be declared before the hunt is to take place, and can not be used with
"Beat the Brush" or "Stalk & Shoot".

Looking back through the Hunting Skill, I think you'll find it will be more a collection
of a few Tricks then methods, as the methods are easily transferable between Hunting
and marksmanship. Which might be a good thing, as instead of creating lots of methods
for each skill, you could have some specialized skills that just give access to a couple of tricks.

I think the bait and wait will work as the other tricks but instead of Perception or Intelligence, The attribute that it adds would be Will.

Actually Hunting ends up being primarily a Perception skill and even though Marksmanship has some Perception elements to it, this is an important addition because it's more focused to the task. Hunting should have at least one +2 method for Perception. It could be one already listed or it could be a new one. It should be one that a hunter is going to want to use almost every time he goes hunting because the players will want to use it every time they use the skill. +2 methods are generally a "best practice".

Racking my brain to come up with a +2 skill for Hunting.

Keep wanting to say Hunter's Sense (which sounds wonky),
maybe Keen Notice or Attention to Detail?

PS: I spelled Spore wrong . . . it should be Spoor.

How about this. . .

Blood Trail - Perception +2
If the prey is wounded but still alive, the hunter may use this method.

I also added Concealment and Quiet both as +1 Perception methods and put .
